Ingredients

  • 1 Lb of Salmon fillet
  • 1 Lemon juiced, plus some fine lemon slices
  • 2-3 Tbsp of olive oil
  • 2 Garlic cloves
  • 1 Tsp of dry oregano
  • 1-2 Tsp of Paprika
  • Salt & Pepper
  • Parsley
  • Aluminium Foil

Method

  1. Pre-heat oven at 375ºF/190ºC

  2. Chop the garlic finely

  3. Mix all the ingredients lemon juiced, olive oil, garlic, paprika, salt, pepper, dry oregano for the sauce

  4. Pat the salmon dry and cut into individual pieces, skin on

  5. Take 1 or 2 pieces of foil and place the Salmon on it. Pull the foil sides up, than place the salmon inside

  6. Paint the salmon with the mixed sauce, then add1 or two slices of lemon on top of the salmon

  7. Close the foil, making sure it form a tent so as to allow for enough air in the foil, which helps in the cooking process.

  8. I usually place the pouch in a sheet tray, to avoid any mess if the foil tent was not properly closed

  9. Place into the warm oven for about 18-20 mn

Take out, sprinkle some parsly and plate. You can serve with an extra lemon slide on the side.
