Somehow Nan likes Banana bread, so I gave it a try and it turned out quite nice.

Ingredients

  • 3 very ripe bananas
  • ½ cup unsalted butter
  • 3/4 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1/2 Vanilla Bean
  • 1 bag of Vanilla sugar

Method

  1. Bring the butter at room temperature

  2. Preheat the oven to 350°F.

  3. Grease and flour a bread load pan 

  4. In a mixing bowl, cream (mix) together the softened butter sugar and vanilla sugar

  5. Add the mash bananas (pre-mash in a bowl with a fork

  6. Mix in the bowl

  7. Add the eggs

  8. In a separate bowl, mix the flour, baking soda and salt

  9. Add to the batter.

  10. Transfer the mix to the baking pan

  11. Place into the oven for 55 or 60 min

  12. Control done-ness using a toothpick in the center of the cake (it should come out clean)

  13. Take it out of the oven when ready, wait a bit, then remove from the pan and let it cool on a rack

I first tried cutting all proportion by 3 for a small version, worked like a charm (used 1 egg for it), I cut the baking time to 30 mn.
