Ingredients

  • 1-2 chicken thigh (or breast, about 200 grams) per person
  • 5 cloves of garlic
  • 4 Thai chilies
  • 1 tablespoon of olive oil
  • 1 teaspoon of fish sauce
  • 2 Tablespoon of soy sauce
  • 0.5 teaspoon sugar
  • 1 handful of Thai basil  or just plain basil leaves

Method

  1. Cut the chicken into very small sized pieces. (all portions if you do more than one)

  2. Peel the garlic, cut the chilies, add to a mortar and make a paste

  3. Get your basil and set aside

  4. Mix the fish sauce, soy sauce and sugar in a small cup

  5. Add the oil to a pan on high heat

  6. Add 

  7. Now it’s time to start cooking. Heat your wok on high heat, and add about 1 tablespoon of oil to the pan.

  8. When the oil is hot, add the garlic/chilies paste and stir for 30 seconds, don’t let it burn

  9. Add a portion of chicken, stir continuously

  10. Stir until the chicken is cooked

  11. Add the fish/soy/sugar sauce

  12. Keep stirring for a minute

  13. Add the basil, stir for 10 seconds then take off the heat and serve over rice.
