Ingredients
- 1-2 chicken thigh (or breast, about 200 grams) per person
- 5 cloves of garlic
- 4 Thai chilies
- 1 tablespoon of olive oil
- 1 teaspoon of fish sauce
- 2 Tablespoon of soy sauce
- 0.5 teaspoon sugar
- 1 handful of Thai basil or just plain basil leaves
Method

Cut the chicken into very small sized pieces. (all portions if you do more than one)

Peel the garlic, cut the chilies, add to a mortar and make a paste

Get your basil and set aside

Mix the fish sauce, soy sauce and sugar in a small cup

Add the oil to a pan on high heat

Add

Now it’s time to start cooking. Heat your wok on high heat, and add about 1 tablespoon of oil to the pan.

When the oil is hot, add the garlic/chilies paste and stir for 30 seconds, don’t let it burn

Add a portion of chicken, stir continuously

Stir until the chicken is cooked

Add the fish/soy/sugar sauce

Keep stirring for a minute

Add the basil, stir for 10 seconds then take off the heat and serve over rice.
