Interesting Pear pie.

Ingredients

  • 250 g of [Sugar Dough / Pâte Sucrée](Sugar Dough Pate Sucree.md)
  • 2 [Poached Pears (Sous-Vide)](Poached Pears Sous Vide.md)
  • Almond Cream
    • 60 gr of unslated butter
    • 1 Egg
    • 60 gr of Sugar
    • 80 gr of Almond Flour

Method

  1. Pre-heat the oven at 450 F / 230 C

  2. Take the butter out, so that it is at room temperature

  3. Roll the dough, then lay it out either in a pie dish or - as I do - on a silicone mat using a pie ring

  4. Place the pie dish in the refrigerator for 10 mn, then take it out, likely poke the dough using a fork and lay a parchment paper circle on top of the dough (not the side)

  5. Place in the oven for 10 mn

  6. Take the pie crust out of the oven, let it cool a bit

  7. Turn down the oven to 350 F / 180 C

  8. Take the pears out of the sirup, slice each halves being careful not to go all the way (see picture)

  9. Preparing the almond cream (frangipane), mixing butter, sugar, mix well, then incorporate the egg into the butter sugar, once the dough is smooth, add the almond flour

  10. Lay the cream into the pie plate

  11. Add pears on top of the cream

  12. Bake at 350 F / 180 C for at least 30 mn, usually it takes me about 40-45mn
