Fresh spin on cauliflower, pretty good
Details
Ingredients
- 1 Cauliflower head
- 1/4 Tsp Mustard Seeds
- 1/2 Tsp Cumin Seeds
- 1 Sprig of curry leaves
- 1 Onion, chopped
- 2-3 Green chili (thai is fine, to tatse), chopped
- 1 Tbsp of fresh ginger, finely cut
- 2-3 Garlic cloves, finely cut
- 2 large tomatoes, chopped
- 1 Tsp of Garam Masala
- 1/4 Tsp of tumeric
- 1/4 Tsp of chili powder
- 1/2 Tsp of Coriander Powder
- 1 Tbsp of mix curry powder
- 1 Can of coconut milk
- 3/4 Tsp of salt
- 1 Tsp of cornstarch
- Fresh cilantro
- Pepper to taste
- Olive Oil
Method
- Prep all the ingredients
- Cut the cauliflower in florets
- On medium low, heat some oil
- Add mustard & cumin seeds, as well as the curry leaves
- When the leaves sizzle, add onion and green chili, sautéed for about 5 mn
- Add the garlic and ginger, saute for another minute
- Add the tomatoes and salt, saute till the tomatoes are cooked (break down)
- Add tumeric, chili powder, garam masala and coriander powder, saute for 1 or 2 minutes
- Turn the heat up to medium high, add the cauliflower florets and saute for a couple of minutes
- Add the coconut milk, using a bit of it to dilute the cornstarch, add the cornstarch (mixed) also
- Cook until the cauliflower is tender, about 15 mn
Just before service, garnish with the cilantro.
