Details

Ingredients (per person)

  • 1 egg
  • 1/2 Avocado
  • Chives
  • 1 slice of bread
  • Salt & Pepper
  • Cayenne pepper
  • Olive Oil

Special Hardware

  • Plastic Wrap
  • Steamer
  • Whip or Stand mixer

Method

  1. Start the steamer to get it hot
  2. Take a large piece of plastic wrap, oil the part that will hold the egg, place it is a bowl that can hold the egg (whipped white and yolk), lightely oil the part of the wrap that will host the egg whites (prevent sticking)
  3. Separate the yolk from the white
  4. Crack some pepper on the yolk
  5. Add a pinch of salt to the white and whip to a firm peak
  6. Place the egg white into the plastic wrap
  7. Using a spoon, create a nest for the yolk, go deeper than you think you should, lay the yolk inside the white
  8. Close the wrap tightly
  9. Place the wrap in the streamer for  6 minutes
  10. In the meantime, take the avocado, add some salt and pepper, and a pinch of cayenne
  11. Slice the bread, something like 1 cm, and toast it in a pan with some butter or olive oil
  12. Cut the chive, set aside
  13. Take the egg out of the steamer
  14. Lay the bread down on a plate
  15. Spread the avocado mix on the bread, toasted side up
  16. Open the wrap and take the plastic off
  17. Lay the cooked cloud egg on top of the toast, flat side on top
  18. Sprinkle some olive oil and some chive, then serve
