A nice variation, same technic as for the [carbonara](Spaghetti Carbonara Originalroman No Cream.md) but no eggs, no guancale
Details
Ingredients
- 250 g of spaghetti
- 2 Garlic Cloves
- 3 Tbsp of butter
- 3 Tbsp of flour
- 0.5 Tsp of Cayenne pepper
- 1 Cup of Pecorino or Parmesan cheese
- 200 g of crab meat
- Salt & pepper
Method
- In a pot bring the pasta water to boil
- Mince the garlic
- Grate the cheese
- When the pasta water boils, add salt
- Add the pasta and cook (usually 1 mn less than cooking time, so if the pasta requires 10 mn, cook the pasta 9 mn
- In a pan, on medium-low eat, melt and foam the buter
- Add the flour , salt and pepper and cayenne, stirs the roux well. Takes about 90 s or 2 minute
- Do not let the roux turn brown, reduce the heat if necessary
- Add some pasta water to the roux, mix again well until you get something smooth and not too thick, add pasta water as necessary then add the minced garlic
- Add the crab meat to bring it to temprature
- Add the pasta, and finish cooking, take about 1-2 minutes
- Add some pasta water to the grated cheese to get a paste
- Turn the heat down
- Add the cheese paste, mix well but carefully, it should become creaming
- Serve
