Interesting twist on the chocolate cake. Best serve cold according to Margo and Nan, so do it the day before.

Ingredients

  • 150 g of Lindt 70% (dark chocolate)
  • 113 g (1/2 cup) of unsalted butter
  • 150 (5/8 cup) of granulated sugar
  • 3 large eggs
  • 1/2 cup unsweetened cocoa powder

Method

  1. Preheat oven to 375 °F
  2. Line with parchment paper a 20 cm (8 in) round baking pan, then butter paper and sides
  3. In a double boiler, melt the chopped chocolate and butter
  4. Remove from heat, add sugar and mix well
  5. Add whole eggs, again mixing well
  6. Sift in the cocoa powder, again whisk until combined.
  7. Pour the mixture into the pan and bake in the oven for 25-30 mn (30 on mine but tends to be low)

Keeps well after cooling completely, Keep in an air tight container.
