Ingredients

  • 100 gr + 8 Square of Nestle Dessert Chocolate, Lindt 70% or any high end dark chocolate
  • 3 eggs
  • 80 gr of sugar
  • 50 gr of butter + 1 tbsp
  • 1 Tbsp of flour
  • 10 rasberries
  • 1 Tsp of confection sugar

Method

  1. Pre-heat over at 260 C (500 F)
  2. Melt the 100 gr of choc. and the butter in a bain marie
  3. In the meantime butter 4 ramequins (small glass cup like the one you use for souffle) and flour them so as to prevent stickyness
  4. In a pot, mix the eggs, sugar and flour
  5. Incorporate the melted choc choc into the pot and mix well
  6. Pour 1/3 of the mix into each ramequin
  7. Add 2 choc. cube in the bottom of each ramequin
  8. Cover with the rest of the melted choc. mix
  9. Insert into the oven for about 8-10 minutes, check after 8. Usually the top is cracked when ready
  10. Best served with a spinkle of confection sugar and a few rasberries (strawberries). Also goes very well with a little Creme Anglaise
