Ingredients
- 12 Gambas (large shrimps)
- 4 Large tomatoes
- 4 Garlic Cloves
- 1 Bunch of Parsley
- 4 Tablespoon of Olive Oil
- 4 Tablespoon of Bread Crumps
- 1 Teaspoon of Sugar
- Salt & Pepper
- Red Pepper
- Olive Oil
Method
- Turn on your oven grill
- Split the tomatoes in 2, place then in an open proof plate large enough to hold the tomatoes and the gambas
- Springle the sugar on top of the tomatoes
- Place the plate under the grill for 15 minutes
- While waiting for the tomatoes, peel and chop the garlic
- Chop the parsley
- Mix the parsley and garlic into a bowl
- Add 4 tablespoon of olive oil to the parsley & garlic mixture
- Add salt, pepper, red pepper - to taste - and the bread crumps and mix it well
- Dive the mixture in two equal portion
- Split the gambas in two (length-wise)
- Spread the garlic/parsley mixture into the gambas
- Salt, Pepper and Red Pepper on the gambas
- Your 15 minutes timer should be about to ding, when it does, take out the plate
- Place the gambas flat into the plate, sprinkle some olive oil on the gambas
- Spread the remaining parsley/garlic mixture on the tomatoes
- Place back under the grill for 4 minutes
- After 4 minutes, turn over the gambas, add a tad of olive oil if needed and place back under the grill for another 4 minutes
Note: Serve as-is or with some fresh pasta. You can use the recipe either as a main course for two, or as an apetizer for 4 people.
