Ingredients Marinade
- 1 or 2 lb of boneless chicken tights
- 1 Tsp Salt
- 0.5 Tsp pepper
- 2 Garlic cloves, pressed
- 1 Tbsp Dried Oregano
- Half a lemon, juiced
- 1 Tsp of ground cumin
- 1 or 0.5 cup of greek yogurt
- 2 Tbsp Olive Oil
Ingredients Tzatziki Sauce
- 2 cup of greek yogurt
- 0.25 cup of parsley (or dill)
- 3 Garlic gloved, peeled, grated or pressed
- 1 Tsp of salt
- 0.5 Tsp of pepper
- 1 Lemon, juiced
- 1 cucumber grated & pressed
- 3 Tbsp Olive oil
Method Marinade
- It can be useful to slice the chicken tights to reduce their thickness
- Add all the ingredient but the chicken into a ball, mix well
- Add the chicken and mix well to properly coat the chicken
- Cover, and set aside in the fridge for 24 h (in a rush, marinade 1 or 2 hours)
Method Tzatziki Sauce
- Peel, seed and grate the cucumber
- Press the cucumber meet to remove the water
- Cut the parsley
- In a bowl, mix all the ingredients
The sauce will keep in the fridge up to a week, if in a sealed container
Method - Assembly

Pre-heat the oven at 400°F

Remove the chicken from the fridge

Stack the chicken on the skewer, making sure to rotate each thighs to even the layers

Place in the oven for about 90 mn, until the chicken gets to an internat temperature of 70°C/165°F

Take out of the oven and let it cool 10-15 mn before slicing
Serve with Pita bread, Tzatziki sauce, pieces of cucumber and tomatoes, some arugula salad or in a bowl.
You can also replace the chicken with lamb, works well.
