Ingredients

  • 3 large potatoes (Russet works best)
  • Half a lemon
  • 3 Tbsp Olive Oil
  • 1/8 Cup of Mustard
  • 2 Large Garlic Cloves
  • Thyme  (fresh preferably)
  • Salt & Pepper

Method

  1. Pre-heat oven to 400°F/200°C
  2. (Optional) Peel the potatoes
  3. Cut in wedges (lenghtwise), about 1-2 cm wide strips
  4. Prep a baking sheet, silkpat are great, oiled parchment paper works fine as well
  5. In a large mixing bowl, juice the lemon half, add olive oil, mustard, whisk to combine
  6. Add the potatoes, salt and pepper, add thyme, crush and add the garlic.
  7. Toss well to coat the potatoes
  8. At this point, you can let it sit up to a few hours, or if in a rush, proceed to cooking
  9. Transfer to the baking sheet
  10. Cook for 55-60 minutes
  11. Check the potatoes, add a few minutes if needed
  12. Take our and serve
