Ingredients
- 2 tbsp of Green Peppercorn
- 1 Shallots
- 1 tbsp of Butter
- 1 cup of Heavy Cream
- 1/4 tsp of Corn starch
- Salt & Pepper
- Optional 1/2 Tbsp of Cognac
Method
- Mince the shallots
- Crush about 1 tsp of the green peppercorn
- Place the butter in a pan, over medium heat
- Add the shallots, cook until transparent, do not let them brow
- Add the peppercorn & mix
- Let it cook 1 minute
- Add the cognac, light it up
- Place the corn starch in a cup, then mix it with the cream to dilute well
- Add the cream & corn starch mix into the cream
- Let this cook over medium low heat
