Ingredients

  • 2 tbsp of Green Peppercorn
  • 1 Shallots
  • 1 tbsp of Butter
  • 1 cup of Heavy Cream
  • 1/4 tsp of Corn starch
  • Salt & Pepper
  • Optional 1/2 Tbsp of Cognac

Method

  1. Mince the shallots
  2. Crush about 1 tsp of the green peppercorn
  3. Place the butter in a pan, over medium heat
  4. Add the shallots, cook until transparent, do not let them brow
  5. Add the peppercorn & mix
  6. Let it cook 1 minute
  7. Add the cognac, light it up
  8. Place the corn starch in a cup, then mix it with the cream to dilute well
  9. Add the cream & corn starch mix into the cream
  10. Let this cook over medium low heat
