Ingredients

  • 1 or 2 lb of Skirt Steak (preferably think) or similar (hanging tenderloin, flank or oyster steak)
  • Vegetable Oil
  • Salt & Pepper
  • 1 tbsp of unsalted butter
  • 1 Cup of Shallots
  • 3 Tbsp of parsley
  • 2 Tbsp of white wine

Method

  1. Pre-Heat the grill
  2. Pre-heat the oven at 170F
  3. Rub the steak with a little bit of oil, salt & pepper
  4. Grill the steaks for about 3-4mn on each side
  5. Place the steaks into a plate then place into the oven for at least 15mn and up to an hour
  6. 10 minutes before serving
  7. Slice the shallots
  8. Cut the parsley
  9. In a pan, heat the butter at medium heat
  10. Brown the shallots for about 2 minutes along with a tad of salt and pepper
  11. Add the parsey, the wine and the juices of the meat (keep the meat in the oven)
  12. Let reduce for a couple of minutes

nice served with saute potatoes
