Details

Ingredients Garlic Sauce

  • 1 egg yolk
  • 1 tsp of Dijon mustard
  • 3 cloves of garlic
  • 1/3 Cup of Yogurt
  • 1/3 Cup of Oil

Ingredients Marinade

  • 1 kg of chicken thighs
  • 1/3 cup of White Vinegar
  • 1/3 cup of Lemon Juice
  • 1/3 cup of Olive oil
  • 1/3 cup of Yogourt
  • 1 tbsp of Lebanese 7 Spices
    • If you want to make it here
  • 1/2 tsp of Black Pepper 
  • 1 tbsp of garlic powder
  • 1 tbsp of onion powder
  • 1.5 tbsp of Herbes de Provence

Ingredients Assembly

  • Optional: 1 potato for French fries
  • I cucumber
  • 1 tomato
  • Some lettuce or like
  • Flat Bread (check this [recipe](Soft Flatbread No Yeast.md))

Method Marinade

  1. Cut the meat finely
  2. Mix all the ingredients with the chicken
  3. Cover and marinade in the fridge for 24 hours

Method Garlic Sauce

  1. Mix mustard and yolk
  2. Drip very slowly the oil into the yolk mix while creating an emulsion (mix well and go slowly with the oil)
  3. More oil, more mixing
  4. added the garlic,crushed
  5. Add the Yogurt, mix again
  6. Set aside

Method Meat

  1. Optional: Prepare the fries
  2. Cut the potato for the fries
  3. Rinse the fries, then reserve in cold water for 30  mn
  4. Blanch in oil at 320 F for about 6 mins (watch it if you do just 1 potato)
  5. Let the fries rest for 30 mn
  6. Fry at 380 F for a few minutes
  7. Heat a cast iron pan on medium heat
  8. Add the meat and marinade
  9. Grill well the chicken with the marinade

Method assembly

  1. Lay the bread down

  2. Now spread a nice layer of garlic sauce

  3. Add some fries

  4. Add the meat 

  5. Peel the cucumber, then slice and add

  6. Cut and add some tomato slices

  7. Add the lettuce

  8. wrap it &  enjoy
