Ingredients

  • 2 lb of skinless chicken breast
  • 1/2 cup of extra-virgin olive oil
  • 2 large onions
  • 4 medium size tomatoes
  • Salt & black pepper
  • Optional: 1/2 Teaspoon of saffron

  • Long thin metal Skewers

Method

Method Marinade

  1. Grate the onions
  2. Mix with the olive oil, saffron, salt and black pepper
  3. Cut the chicken in long rectangular pieces about 1/2 in width
  4. Mix with the marinade
  5. Cover and store in the refrigerator overnight

Method Skewers

  1. Thread the chicken on long, thin, metal skewer
  2. If using a whole chicken, thread the leg and thigh pieces separated from the wings and breast and the breast requires slightly less cooking
  3. Thread the tomatoes on a separate skewer
  4. Brush with the marinade
  5. Barbeque for 5-10 minutes on each side, turn frequentlt

Notes

  • Serve hot with basmati rice or middle-eastern bread.
  • original recipe calls for a complete chicken you cut into small pieces.
