Details

Ingredients

  • 1 Kg of Potatoes
  • 2 eggs
  • 1 Kg of All Purpose Flour
  • Mash potatoes mill or press

Method

  1. Cook the potatoes (peel or not, 25 mn in water with Salt)
  2. Pass the potatoes through the mill
  3. Wait for the mash to cool down
  4. Add the eggs & mix
  5. Add half of the flour & Mix
  6. Continue to add flour until the dough is no longer sticky
  7. Once the dough is ready, you can wait until you are ready to prep & cook
  8. Take a fistfull of dough and roll with your hands (on a board with a tad of flour) until you get a long cylinder of about 0.5 in (1.25 cm) think
  9. Cut into 1.25 in (3cm) pieces and set aside
  10. Boil some water
  11. Add some salt
  12. When ready, deep 10 or 12 pieces into the boiling water, they are ready when they start to float
  13. Pick up the floating pieces, drain and set aside (cover to that they keep warm, I usually use a pyrex plate)
  14. Repeat until done
