Ingredients

  • 1 Sheet of Puff Pastry dough
  • 400 g Leeks (white part, about 4 pieces)
  • 1 dl (1/3 cup) Heavy Cream
  • 100 g of butter (1 stick)
  • 70 g of Gruyere (shredded)
  • 70 g of Bacon (from a slab)
  • Salt & Pepper

Method

  1. Pre-heat oven to 350 F
  2. Slice the bacon very finely
  3. Shred the gruyere
  4. Slice finely the leeks
  5. While the leeks cook, layout your dough in the mini-pie dish
  6. On medium heat, place half of the butter, then add the leeks
  7. Salt and pepper and cook the leeks for about 4 minutes while steering
  8. Cut the rest of the butter in small part
  9. Dry out the leeks, then add the cream and the rest of the butter  and let it cook another 3-4 minutes
  10. Dry out the leeks, personally I strain the mixture to make sure it is not too dry
  11. Now fill the little pie with the leeks
  12. Add a bit of bacon and top it with a little bit of cheese
  13. Place the pies in the oven for about 25 mn
