Ingredients

  • 6 Eggs yoks
  • 1 cup of sugar
  • 1/2 cup of lemon juice
  • 1/2 cup (1 stick) of unsalted butter cut in small pieces
  • 1 Tbsp of lemon zest
  • 1 baked shell

Method

  1. Pre-heat the over and bake the shell or [Sugar Dough / Pâte Sucrée](Sugar Dough Pate Sucree.md)
  2. Mix the yoks with the sugar and lemon juice
  3. On medium heat cook the mix for 10-12 minutes, stirring constantly
  4. Keep stirring until the mix thicken
  5. Take off the heat, keep stirring until it cool a bit
  6. Mix in the butter, piece by piece until well incorporated
  7. Add the lemon zest
  8. Pour into the baked shell
  9. Place in the fridge for at least an hour
