From a recipe by Camille Mansouri. Replaced the mandarine by orange. They turned out delicious.

Ingredients
- 180 g eggs (about 3)
- 160 g of brown sugar
- 75 g of honey
- 75 g of whole milk
- 300 g of butter
- 1.5 g of salt
- Zest of 1 lemon
- zest of 1 orange
- 1 Vanilla pod
- 12.5 g of baking powder
- 250 of flour
Method Melange Preparation

Cut the butter in small piece, add to a pan, and melt over medium heat until the butter turns amber.

Remove from the heat, pour into a bowl and let it cool

In a bowl, mix the milk, honey, salt, zests (orange and lemon) and cooled brown butter

Scrape the vanilla and add to the bowl

In another bowl, mix he flour and baking powder (you can sift it, I did not)

In mixer 3rd bowl, whisk the eggs and brown sugar, at high speed, when peaks appear…reduce the speed

Add the butter mix (milk, honey etc…)

Then add bit by bit the flour mix

Mix until the melange is homogeneous

Plastic wrap to contact and reserve overnight
Method Baking
- The next day
- Pre-heat oven to 220C/ 425 F
- Fill your Madeleine mold
- Let them rest in the fridge for 15 mn
- Bake 8 mn at 220C/400F
