Ingredients
- 100 gr of all-purpose flour, sifted
- 100 gr of unsalted butter, melted
- 110 gr of sugar
- 2 eggs
- 1 lemon, or 2 teaspoon of Orange flower water
- 1 pinch of salt
- 1 teaspoon of dry yeast
Method
- in a pan, on very low eat, melt the butter and set aside
- In a large bowl, get the zest of half of the lemon
- Add the two eggs
- Add the salt
- Add the sugar
- Using a mixer or by hand, mix well for a few minutes until the mixture whitens
- Add the sifted flour and the yeast
- Mix well to incorporate the melange
- Slowly add the butter, keep mixing while doing so
- Set the mixture aside, in the fridge, for about 2 hours…cover with a plastic wrap
- 2 hours later, Butter then flour the madeleines pan
- Pre-heat oven at 220C
- Using a spatula, give a few twist to the mixture to break it
- Pour about 1-2 tablespoon of the mixture into each madeleines holes
- Bake in the oven for about 10-12 minutes
