Ingredients
- 1 Duck Breast
- Black Peppercorn
- Lots of Kosher Salt
- Dried Hot Peppers
- 1 clean kitchen towel
Method

Pat dry the duck breast

Lay some Kosher Salt in a container

Place the duck breast over the salt

Cover the breast with more salt

Place in the refrigerator for 12-18 hours

The next day, crunch the black peppercorn and dried pepper together

Take the breast out of the fridge, rub out the salt from the duck breast

Cover both side of the breast with the black pepper/hot pepper mix

Wrap the duck breast in the kitchen towel

Place in the refrigerator for 3 week
After 3 weeks, take out of the fridge, cut fine slices and enjoy.
