Pancakes need no introductions

Ingredients

  • 2 1/4 Cup of Flour
  • 2 Tsp of Baking Soda
  • 1 Tsp of Salt
  • 2 Cup of Whole Milk
  • 4 Larges eggs (yolk and whites separated)
  • 2 Tbsp (1/4 stick) of unsalted butter
  • 2 Tbsp of sugar

Method

Method Batter

  1. Mix the flour, baking soda, sugar and salt in a large bowl
  2. In another bowl, mix the egg yolks and the milk
  3. Now combine the flour and milk-yolk mixture; mix the batter well
  4. Beat the whites until they are firm
  5. Carefully fold the whites into the batter; start with one half then the other.

Method Cooking

  1. Lightly butter the pan
  2. Heat the pan at medium heat
  3. When warm, pour in the batter roughly 1/4 cup per pancake
  4. Turn over after a couple of minutes or when cooked to taste.
  5. Collect the pancake in a plate, cover with a towel to keep warm
