Pancakes need no introductions

Ingredients
- 2 1/4 Cup of Flour
- 2 Tsp of Baking Soda
- 1 Tsp of Salt
- 2 Cup of Whole Milk
- 4 Larges eggs (yolk and whites separated)
- 2 Tbsp (1/4 stick) of unsalted butter
- 2 Tbsp of sugar
Method
Method Batter
- Mix the flour, baking soda, sugar and salt in a large bowl
- In another bowl, mix the egg yolks and the milk
- Now combine the flour and milk-yolk mixture; mix the batter well
- Beat the whites until they are firm
- Carefully fold the whites into the batter; start with one half then the other.
Method Cooking
- Lightly butter the pan
- Heat the pan at medium heat
- When warm, pour in the batter roughly 1/4 cup per pancake
- Turn over after a couple of minutes or when cooked to taste.
- Collect the pancake in a plate, cover with a towel to keep warm
