Ingredients
- 500 gr of Spagetti
- 2-3 lb of Fresh Salmon
- 5-6 Shallots
- Chives
- 250 cl of heavy cream
- 25 gr of butter
- Salt and pepper
- 25 cl of White Wine (maybe a tad more)
- Olive Oil
Method
- Boil the water for the pasta
- Mince the shallots
- Chop the chives
- Skin the salmon and cut in 1/2 un cubes
- On medium-high heat, heat the butter
- Melt the shallot, don’t let it brown
- Add the salmon, let it brown a tad
- Salt and pepper
- Add the White Wine, let it reduce quite a bit
- Add the cream, turn dow the heat (add a bit of starch or maizena to thicken if needed)
- Once the water is boiling, a drop of olive oil, salt
- Cook the pasta
- Right before serving, add the chopped chive to the salmon sauce
- Drain the pasta and serve
