This is one of Killko’s household recipe.

Ingredients

  • 500 gr of Spagetti
  • 2-3 lb of Fresh Salmon
  • 5-6 Shallots
  • Chives
  • 250 cl of heavy cream
  • 25 gr of butter
  • Salt and pepper
  • 25 cl of White Wine (maybe a tad more)
  • Olive Oil

Method

  1. Boil the water for the pasta
  2. Mince the shallots
  3. Chop the chives
  4. Skin the salmon and cut in 1/2 un cubes
  5. On medium-high heat, heat the butter
  6. Melt the shallot, don’t let it brown
  7. Add the salmon, let it brown a tad
  8. Salt and pepper
  9. Add the White Wine, let it reduce quite a bit
  10. Add the cream, turn dow the heat (add a bit of starch or maizena to thicken if needed)
  11. Once the water is boiling, a drop of olive oil, salt
  12. Cook the pasta
  13. Right before serving, add the chopped chive to the salmon sauce
  14. Drain the pasta and serve
