I can not remember when I tried that recipe but I am sure I did and it turned out OK

Ingredients

  • 2 Eggplants
  • 1/2 Lb of ground beef (about 2 burgers)
  • 2 slices of french ham
  • 1 egg
  • 2-3 garlic cloves
  • 200 gr of Emmental
  • A tad of Parmesan cheese
  • A can of tomatoes sauce

Method

  1. Pre-heat oven at 350F
  2. Cut the egg plants in halves
  3. Carefully remove the inside ‘meat’ - set it aside - make sure to keep the eggplant shell intact
  4. Dice the eggplant meat
  5. Dice the emmental, but keep a little bit (50 gr) aside to grate
  6. Slice the garlic
  7. In a pan, grill lightly in a bit of olive oil the eggplant shell, then set aside
  8. In a pan, with a little bit of oil, melt the eggplant meat
  9. Add the ground beef
  10. Season to taste
  11. Add the emmental, and ham, cook a few minutes
  12. Add the garlic, egg and parmesan cheese
  13. Place the cooked eggplant shells into an oven proof plate, then fill up the shells with the mixture
  14. Add a bit of tomatoe sauce and top with a bit of grated emmental
  15. Cook in the oven at 350F for about 40-45mn
