Preparation for the spring rolls

Ingredients

  • 2 cups of carrots (julienne)
  • 2 cups of daikon radish (julienne)
  • 2 cups of white vinegar
  • 2 cups of water
  • 0.5 cup of sugar
  • 1-2 tsp salt

Method

  1. In a pan, mix sugar, salt, water and white vinegar
  2. Bring up in temperature (can go hot)  to dissolve sugar and salt
  3. Take of the hear, transfer to a bow and let it cool (important to keep the veggies crunchy)
  4. In the meantime, julienne the carrots and daikon, 1 or 1.5 mm bands, try to keep it regular
  5. Once the juice is cool down, place the veggies in a recipient that can close, cover completely with the juice
  6. Place in the fridge for a night before use
