Ingredients

  • 1-2 Tbsp of Mayo
  • 1 Tbsp of Heavy Cream
  • 1 Avocado
  • 1 can of crab or fresh crab
  • 2-3 tomatoes
  • Scallions
  • 1 Lemon
  • Ginger
  • Cilantro
  • Basil or leeks (3-4 leaves or so, for the leeks use the yellow part, same amount as for the basil)
  • Olive Oil
  • Curry powder
  • Salt 
  • Pepper

Method

  1. Peel the tomatoes (1 minute in boiling water)
  2. Remove the seeds
  3. Finely cut to the tomatoes to make a mash
  4. Add a bit of salt on the tomatoes mash, set aside.
  5. Prep the mayo (1 egg yolk, 1 tsp of mustard, whip, add oil)
  6. Cut the scallions, finely
  7. Cut the leeks, finely
  8. Peel the avocado, mash roughly with the fork, add salt and curry to taste (tiny bit), a bit of lemon juice
  9. Add the crab, mayo, cream, scallions, a bit of grated ginger, curry, cilantro and salt & pepper.  to a bowl (Be light with the cream and mayo)), mix well
  10. In a mold, add a layer of avocado
  11. Add a layer of crab mixture
  12. Add a 2-3 mm of tomatoes mash
  13. Add the finely cut basil or leeks
  14. Transfer the mold to a plate, remove the mold
  15. In a bowl, mix olive oil, lemon juice and curry
  16. Add some of the oil mixture
  17. Serve
